  • Apple Brandy Liqueur (& tipsy apples)

Apple Brandy Liqueur (& tipsy apples)

(makes about 2 litres)

  • 2 lb sugar (900 g)

  • 16 fl oz water (470 ml)

  • 4 pounds apples, cored and peeled

  • 1 bottle of brandy (750 ml)
    - just ordinary brandy will do because it's the apples that make it awesome.

  • 1 cinnamon stick

  • (plus 2 extra cinnamon sticks and 6 whole cloves for bottling later)

Put the sugar and water into a large pan and bring to a boil until sugar is completely dissolved. Allow it to cool. Meanwhile peel, core and slice the apples and put them in a large glass or plastic container (don't use a metal container). Pour the cooled syrup over them, add the cinnamon stick, and then add the brandy. Let it sit in a dark place for two weeks, stirring every other day or so. After two weeks, remove the apples and keep to one side (for using in other wonderful dishes later). Remove the cinnamon stick and strain the remaining liqueur through a fine sieve. Pour into a large glass storage bottle - or two or three smaller clean bottles. Put three cloves and a cinnamon stick in each bottle and let it mature for at least another two weeks. However the flavours improve and the apple brandy liqueur becomes much smoother if you can leave it a month - and don't forget to keep the brandy-soaked apples to serve over icecream or in any of your other favourite recipes - tipsy apple cake is a winner.
